Curtis Italian Franks


  • 4 Curtis Beef Master Frankfurters
  • 1/2 large Spanish onion, sliced and divided into rings
  • 3/4 cup sliced mushrooms
  • 1/2 cup mixed red and green bell peppers, in 1-inch pieces
  • 1 tablespoon margarine
  • 4 crusty Italian rolls

Grill Curtis franks or cook in a skillet until done: 4 to 5 mins.

In another skillet melt margarine over medium heat. Add onion and sauté, stirring frequently, for 4 mins. Add mushrooms and sauté 3 mins. more. Add red and green peppers; sauté 2 to 3 mins. more until vegetables are cooked.

Split Italian rolls. Add franks and top with sautéed vegetables.
4 servings.

Pepper-Beef Kabobs


  • 4 Curtis Beef Master Frankfurters, cut in 1-inch pieces
  • 12 small whole onions or 3 medium, cut in quarters
  • 12 canned pineapple chunks (juice pack)
  • 1/2 green pepper, cut in 1-inch squares
  • 1/2 red pepper, cut in 1-inch squares
  • 6 slices Curtis bacon, cut in half crosswise
FOR MARINADE, COMBINE:
  • 1/4 cup salad oil
  • 1/4 cup Lite soy sauce
  • 1/3 cup low sodium, Lite ketchup
  • 3 tablespoons vinegar
  • 1 teaspoon dried thyme
  • 1 teaspoon prepared mustard

Score cut ends of frankfurter pieces. Pour marinade over franks, onions, pineapple and peppers; chill 3 hours. Partially cook bacon. Wrap a bacon piece around each pineapple chunk. Alternate frank pieces, vegetables and bacon-wrapped pineapple on 9-inch skewers. Broil 3 to 4 inches from heat about 12 mins., making a quarter turn every 3 mins. Brush with marinade after each turn.
